You will also gain Level 3 qualifications in food hygiene and health and safety, which are essential for work in the catering and hospitality industry.

You will lead a team of students, preparing food for staff, students and visitors. You will develop higher level skills, including:

Kitchen management
Menu planning

Royal Icing Techniques

The course is designed to suit anyone who wishes to improve their skills or learn new techniques. You will work with Royal Icing and develop or improve the following techniques:- Coating, Piping borders, filigree work, embroidery, writing and embellishing.
All materials will be provided but you will be required to have or purchase your own piping tubes, 1, 2 3 & 8, fine paint brushes & colours.
The course is purely practical and intensive. You may be required to do some pre class work at home.

The course is designed to suit anyone who wishes to improve their modelling skills or learn new techniques. You will work with marzipan producing both figures and animals. You will learn moulding techniques, working without supports, dressing figures, texturing and accessories. All materials will be provided but you will need to have your own basic modelling tools and small rolling pin, work board and fine paint brush.
The course is purely practical and intensive. You may be required to do some pre class work at home.

Diploma Level 3 in Baking and/or Cake Decoration

Course Format: Public Course / Instructor-Led / Open Enrollment  V

This is a 2 year programme that can be flexible in nature. The course is suitable for school leavers as well as adults looking for a career in the baking industry

You can choose to follow either (1) Dough and Fermented Products route (2) Confectionery route or (3) Cake Decoration route or a combination of all three

There is a mandatory unit that is assessed by short answer examination paper. All other units are assessed through products produced and portfolio evidence.

CIEH Level 2 Award in Food Safety in Catering

The new Level 2 Award is designed to give students an understanding of the terminology used in food safety and enable them to define the terms of food safety; food poisoning; food-borne illnesses; contamination; hazards and HACCP.

Artisan Bread

The course looks in depth at popular artisan and specialty breads. The course is suitable for both the professional baker/chef or patissier as well as anyone with an interest in the art of breadmaking. This course is purely practical in nature and is quite intensive, you will produce a minimum of two different types of bread at each session.
Examples of types of breads that you will produce are :- Vine Fruit and Rosemary, Thai Garlic Bread, Granola Sticks, Pan Romano, Greek Olive Bread, Luxury Focaccia, Georgian Khachapuri, Jalapeno Chilli Cheese Chorizo Bread, Caerphilly and Leek Bread, Rye Bread. All materials and recipe book will be provided.
